Chef Gordons Hearty Chili

Chili: Hearty and comforting, this dish combines ground beef, beans, tomatoes, and spices.

Recipe: Hearty Homemade Chili

Servings: 6

Ingredients:

– 1 pound (450g) ground beef
– 1 medium onion, finely chopped
– 3 cloves garlic, minced
– 1 bell pepper, diced (any color)
– 2 cans (14 ounces/400g each) diced tomatoes
– 1 can (15 ounces/425g) kidney beans, drained and rinsed
– 1 can (15 ounces/425g) black beans, drained and rinsed
– 1 can (15 ounces/425g) pinto beans, drained and rinsed
– 2 tablespoons chili powder
– 1 teaspoon ground cumin
– 1 teaspoon paprika
– 1/2 teaspoon cayenne pepper (adjust to taste)
– Salt and black pepper, to taste
– 2 cups (480ml) beef broth
– 2 tablespoons olive oil
– Optional toppings: shredded cheddar cheese, sour cream, chopped green onions, diced jalapeños, chopped cilantro

Instructions:

1. Brown the Ground Beef:
– In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until it’s browned and no longer pink. Drain any excess fat.

2. Sauté the Aromatics:
– Add the chopped onion, minced garlic, and diced bell pepper to the pot with the beef. Sauté for 3-4 minutes until the vegetables become tender and aromatic.

3. Season the Chili:
– Stir in the chili powder, ground cumin, paprika, cayenne pepper, salt, and black pepper. Cook for another 1-2 minutes to toast the spices and enhance their flavor.

4. Add Beans and Tomatoes:
– Add the diced tomatoes (with their juices) and the drained and rinsed kidney beans, black beans, and pinto beans to the pot. Stir well to combine.

5. Pour in Beef Broth:
– Pour in the beef broth to the pot, and stir to incorporate. This will create a flavorful base for your chili.

6. Simmer and Cook:
– Reduce the heat to low and let the chili simmer for at least 30 minutes, stirring occasionally. The longer it simmers, the more the flavors will meld together. If you have more time, you can let it simmer for up to 2 hours.

7. Taste and Adjust:
– Taste the chili and adjust the seasoning as needed. You can add more chili powder, cayenne pepper, salt, or black pepper to suit your preferences.

8. Serve and Garnish:
– Ladle the hearty chili into bowls. Top with shredded cheddar cheese, a dollop of sour cream, chopped green onions, diced jalapeños, and fresh cilantro, if desired.

Cooking Tips:

– For extra depth of flavor, you can brown the beef in batches, ensuring it gets nicely caramelized.

– If you like your chili spicier, increase the amount of cayenne pepper or add chopped fresh jalapeños.

Serving Suggestions:

– Serve your homemade chili with cornbread, crusty bread, or over a bed of cooked rice for a satisfying meal.

– Pair it with a cold beer or a glass of iced tea to balance the heat.
