Chef Gordons Beef Stroganoff

Beef Stroganoff: Tender strips of beef in a creamy mushroom and sour cream sauce, served over noodles or rice.

Recipe: Creamy Beef Stroganoff

Servings: 4

Ingredients:

– 1 pound (450g) beef sirloin or tenderloin, thinly sliced into strips
– Salt and black pepper, to taste
– 2 tablespoons olive oil
– 1 medium onion, finely chopped
– 2 cloves garlic, minced
– 8 ounces (225g) mushrooms, sliced
– 2 tablespoons all-purpose flour
– 1 cup (240ml) beef broth
– 2 tablespoons Worcestershire sauce
– 1 teaspoon Dijon mustard
– 1 cup (240ml) sour cream
– 12 ounces (340g) egg noodles or cooked rice
– Fresh parsley, chopped, for garnish (optional)

Instructions:

1. Prepare the Beef:
– Season the beef strips with salt and black pepper. In a large skillet, heat the olive oil over medium-high heat. Add the beef strips and cook until they are browned on all sides, about 3-4 minutes. Remove the beef from the skillet and set it aside.

2. Sauté Onions, Garlic, and Mushrooms:
– In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent. Add the sliced mushrooms and cook for an additional 5-7 minutes until they release their moisture and start to brown.

3. Create the Sauce:
– Sprinkle the flour over the mushroom mixture and stir well to combine. Cook for about 1 minute to eliminate the raw flour taste. Gradually pour in the beef broth, Worcestershire sauce, and Dijon mustard, stirring continuously until the mixture thickens, about 2-3 minutes.

4. Add the Beef and Sour Cream:
– Return the cooked beef to the skillet with the mushroom mixture. Stir in the sour cream and cook over low heat for 2-3 minutes, just until heated through. Do not allow the sauce to boil.

5. Cook the Noodles or Rice:
– While the beef stroganoff is simmering, cook the egg noodles or rice according to the package instructions. Drain when done.

6. Serve and Garnish:
– Serve the creamy beef stroganoff over a bed of cooked egg noodles or rice. Garnish with chopped fresh parsley for added freshness and color.

Cooking Tips:

– Choose the right cut of beef: For tender stroganoff, opt for lean cuts like sirloin or tenderloin and slice them thinly against the grain.

– Low and slow: To keep the sour cream from curdling, cook the stroganoff over low heat, and avoid boiling it.
